Do you ever get posessed by the sudden obsession to detox and treat your body with more respect?

It usually happens to me after I’ve downed too many fries or red meat. As was the case these last couple of days.
I ran to the supermarket feeling a mission had been bestowed upon me and filled my trolley with nothing but veggies and fruits.
No, I don’t know how that Ben & Jerry’s found its way to my basket, I had nothing to do with that, I swear.

So. Back to the roots.
Here’s what I concocted for dinner: a cold beetroot soup. Perfect to detox and make you feel all good and healthy again. And it doesn’t get easier than this.

You’ll need:

  • 500g cooked beetroots (I took the organic vacuum packed)
  • 200ml extra light cream (with the least fat% you find)
  • 100ml organic peach juice
  • juice of one lime
  • salt, pepper, and whatever spices you usually like. (I throw a bit of chimichurri in almost every dish)
  • a handful chopped chives

Throw everything but the chives in your blender. Once it’s smooth, serve on your favorite bowl and throw the chives on top.

Voilà!

I was still phasing out carbs so I ate it with some pitta bread. You know, to avoid the withdrawal symptoms.
